For the batter:
- 1 cup all-purpose flour
- 1 cup cornstarch
- 1 T sugar
- 16 oz soda water
For frying:
- Peanut oil
- 2 pounds fresh okra, stem removed and cut in half
- 3 T Cajun seasoning
- 1 cup all-purpose flour
- Salt
For the scallion dipping sauce:
- 1 t cayenne pepper
- 16 oz sour cream
- 1 cup chopped scallions
- 1/4 cup honey
- 1 t salt
1. Whisk batter ingredients together and chill.
2. Heat oil in deep fryer or Dutch oven to 375°.
3. In a shallow pie plate, mix flour and 1 tablespoon of the Cajun seasoning.
4. Season okra with remaining 2 tablespoons of Cajun seasoning.
5. Dip okra in seasoned flour and then in the batter and place into heated oil. Fry until golden, about 4 minutes. Remove to a paper towel-lined plate or tray and season with salt.
6. To make the dipping sauce, mix all ingredients well.
