Zucchini Bread

The neighbor's girls brought us two fine zucchini from their backyard garden. So, I made a few loaves of zucchini bread.

Super easy, and really moist and good, specially when you smear a little butter on a slice!

Ingredients:

  • 2 1/2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 3 T vanilla
  • 1 cup oil
  • 2 cups zucchini, grated
  • 1/4 t salt
  • 1 t baking soda
  • 1/4 t baking powder
  • 1 cup nuts (optional)
  • 3 t cinnamon
  • 1 T sour cream

1. Preheat oven to 350°.

2. Combine all ingredients.

3. Pour into two greased loaf pans.

4. Bake for one hour.
