Oven Denver Omelet

I needed something easy for dinner the other night, so I threw together this Denver omelet that was baked in the oven. The cantaloupe canoe was an added bonus to the meal!

Makes: 3-4 servings
Prep time: 10 minutes
Cook time: 25 minutes

Ingredients:

  • 8 eggs
  • 1/2 cup half-and-half
  • 1 cup cheddar cheese, shredded
  • 1 cup cooked ham, chopped fine
  • 1/4 cup green pepper, minced
  • 1/4 cup onion, minced
  • 1/4 cup parsley (optional)

1. Preheat oven to 400.

2. Beat eggs and cream until light and fluffy.

3. Add the remaining ingredients and stir.

4. Pour into greased 9" square baking dish and bake for 25 minutes or until set.
