The flavor is outstanding. You could also use this glaze on other things, such as smoked meatballs or grilled pork. You could also try this with peaches or papaya, and other fruits.
The original recipe came from Bobby Flay. I found out about it from a great food blog site, My Year On The Grill.
Makes: 1 pound
Prep time: 15 minutes
Cook time: 20-30 minutes

Ingredients:
- 1 cup sugar
- 1 cup red wine vinegar
- 1 ripe mango, pealed, pitted and chopped
- 1 T honey
- 1 pound thick bacon (I used Wright's)
1. Preheat oven to 375 F.
2. Stir sugar and vinegar together in a sauce pan. Cook over high heat until the sugar is dissolved.
3. Add the mango and cook for 5-10 minutes until the mango is softened and the sauce has reduced by half.
4. Let mixture cool slightly then place into a food processor. Puree until smooth.
5. Strain mixture into a small bowl and add honey and salt and pepper to taste.
6. Place bacon a wire rack above a parchment paper-lined baking sheet. Brush with the glaze and bake until crisp. Add additional glaze every 5-10 minutes until it is used up.
