Avocado and Papaya Salad

Easy and refreshing. Don't be afraid to use more cayenne to add a nice contrast to the sweet fruit. You can substitute whatever fruits you like, such as mango or peaches.

If I would have had some fresh cilantro on hand, I would've added some of it, chopped, to the salad too.

Makes: 4-6 servings

Ingredients:

  • 1 lime, zested and juiced
  • 1/2 t salt
  • 1/4 t sugar
  • 1/8 t black pepper
  • 1/8 t cayenne pepper (or more, to taste)
  • 1/4 cup extra-virgin olive oil
  • 2 ripe avocados, halved, seeded, peeled and diced
  • 2 ripe papayas, peeled, halved, seeded and diced

1. In a medium-sized bowl, combine all ingredients except the fruit. Mix well. Add fruit and toss gently to coat.
