Watermelon 'cake'

I found this unique way of serving watermelon on the Veggie Belly blog.


I wish I'd found this earlier in the season, when watermelons were more in season, but it still came out great. Everyone got a kick out of it.

Cut the middle section out of a watermelon. This will leave you with a 'wheel' of watermelon. Lay it flat and cut it into sections like you would a cake. Using a melon baller, scoop out of some of the top of each 'slice'. Place the balls on top of the watermelon. Continue using the melon baller on the ends that you cut off and stack the balls on top of the watermelon. Garnish with a sprig of fresh mint.
