Harvest Creamy Corn Soup

Popcorn on soup? Yes! Better than crackers!


This is a tasty almost-veggie soup. It does have a little bit of bacon in it.

Makes: 4 servings
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:

  • 4 slices thick cut bacon, chopped
  • 1 medium white onion, chopped
  • 2 cups corn
  • 1 medium zucchini, chopped
  • 1 pound small potatoes, chopped
  • 1 red bell pepper , chopped
  • 1 bay leaf
  • 2 t dried thyme
  • 1 t paprika
  • 3 T all-purpose flour
  • 1 quart chicken stock
  • 1 cup heavy cream
  • 1/2 cup fresh parsley, chopped
  • Hot sauce, to taste
  • Popcorn or crackers

1. Heat a large pot over medium-high heat. Add bacon and cook until slightly crisp.

2. Add onions, corn, zucchini, potatoes, bell pepper, thyme, bay leaf, paprika, and salt and pepper to taste. Cook for 7-8 minutes until the veggies start to soften.

3. Sprinkle flour into pot. Stir and cook 1 minute.

4. Add the stock. Bring to a boil. Reduce to a simmer and let the sauce thicken.

5. Add the cream, parsley, and hot sauce and simmer 5 more minutes.

6. Serve with crackers or popcorn.
