Ingredients:
- 2 sweet potatoes, cut 1/8" thick
- 2 beets, cut 1/8" thick
- 1 garlic clove, minced
- 1 t dried rosemary, crushed
- 2 T salt
- Vegetable oil, for frying
1. Heat oil to 350 F in a deep fryer or Dutch oven.
2. Combine garlic, rosemary and salt.
3. Working in batches, fry the potatoes (2-3 minutes) and beets (3-4 minutes) . Remove to a paper towel-lined plate and sprinkle with some of the salt mixture.
