Ingredients:
- 1 4.5 oz tub Boursin cheese
- Handful of arugula, chopped fine
- 6-8 fresh basil leaves, chopped fine
- 3 T red bell pepper, diced
- 2 T fresh chives, chopped
- Salt and white pepper to taste
- 1 large cucumber, peeled
1. Place cheese in a small bowl and add all but the cucumber. Mix well.
2. Cut cucumber into 1 1/2" pieces. Hollow out about 3/4ths of the centers. Fill with cheese mixture and serve.
