Easy Bean Soup

This makes a big ole batch of good-tastin', yet easy to make bean soup.


Use spicy V8 and Rotel for an extra kick!

Makes: 10 servings
Prep time: 5 minutes
Cook time: 30 minutes

Ingredients:

  • 1 lb ground beef
  • 1 medium white onion, chopped
  • 1 15 oz can pinto beans, rinsed and drained
  • 1 15 oz can black beans, rinsed and drained
  • 1 15 oz can Rotel
  • 1 48 oz bottle V8 vegetable juice
  • 1 package taco seasoning mix (or use 3 T of our taco seasoning mix)
  • 1 package Hidden Valley Ranch dressing mix

1. Brown ground beef in a large pot. Add onions and cook until they start to soften.

2. Add remaining ingredients and simmer, uncovered, for 20 minutes.
