Grilled Polenta with Mushrooms

These are really great. Use wild mushrooms if you can, but regular button or creminis will also work fine.


I found the original recipe over on the Vegan A Go-Go blog.

Makes: 4 servings
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:

  • 1 tube precooked polenta, cut into 12 slices
  • 1 T olive oil, divided
  • 2 shallots, sliced thin
  • 2 cloves garlic, minced
  • 4 oz wild mushrooms
  • 1 can diced tomatoes, drained
  • 1/2 dried rosemary, crushed
  • 1/4 t salt
  • 1/4 t pepper

1. Preheat your grill.

2. Brush polenta pieces with half of the oil on both sides. Place on grill and cook 6-8 minutes per side. Remove from grill and keep warm.

3. Heat remaining oil over medium-high heat in a large skillet. Add shallots and sauté 2-3 minutes.

4. Add garlic and cook for one minute.

5. Add shallots and mushrooms and cook until mushrooms start to soften, stirring occasionally.

6. Add tomatoes, rosemary and salt and pepper. Lower heat and simmer 5-10 minutes.

7. Spoon mushroom mixture over polenta and serve.

Is precooked polenta easy to find? Where do you think I would find it in the grocery store? This recipe sounds amazing.

Hi Rachey. We found precooked polenta in the section near the spaghetti sauces and pastas. It was on the very top shelf, so it was easy to miss.
