Fresh Spinach Salad

This is an easy fresh, crisp salad. I think I might add a few sliced strawberries to it next time.


The vinaigrette is awesome.

Makes: 6-8 servings
Prep time: 10 minutes
Cook time: 10 minutes

Ingredients:

  • 1 lb spinach
  • 4 large carrots, peeled, sliced
  • 8 radishes, cut into wedges
  • 4 stalks celery, sliced
  • Vinaigrette (see below)

1. Soak the spinach in lightly salted water. Dry well. Tear into bite sized pieces, including the stems.

2. Combine the spinach, carrots, radishes, and celery in a large bowl. Serve with the dressing on the side.

Vinaigrette:

  • 1/4 cup vinegar
  • 1 T fresh parsley
  • 1 t fresh marjoram
  • 1 garlic clove, quartered
  • 1 t salt
  • 1/4 t fresh ground black pepper
  • 1 cup extra-virgin olive oil

1. Start your blender or food processor. Slowly add each ingredient in the order listed.
