Egg and Ham Sandwiches (Moons Over My Hammy)

I couldn't tell you the last time I ate at a Denny's. But that doesn't stop me from making this take on their Moons Over My Hammy sandwich.


I have to say that these are pretty darned good. If Denny's still has them on the menu you might want to order one next time you're there.

Makes: 1 serving
Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:

  • 2 tablespoons butter, divided, softened
  • 2 eggs, beaten
  • 2-4 slices thin ham sandwich meat
  • 2 slices bread (or bagels)
  • 1 slice Swiss cheese
  • 1 slice Cheddar cheese

1. Melt 1/2 tablepoon of butter in a small skillet. Add ham and cook until warmed through and lightly browned. Remove.

2. Melt another 1/2 tablespoon of butter in the skillet. Add eggs and salt to taste, and scramble. Let set and cook until done. Remove.

3. Spread remaining butter on one side of each slice of bread. Place one slice, butter side down, in hot skillet. Add eggs, ham, and cheese and other slice of bread, butter side up. Cook until bottom bread starts to brown and crisp. Flip and cook until other bread is golden, crispy and cheese has melted.
