Insane Black-Eyed Peas

On an episode of The Best Thing I Ever Ate, Alton Brown commented how great these black-eyed peas from Relish restaurant (now closed) are. I had to make them.


I have to agree with Alton. These things totally rock. They are crunchy on the outside, but soft inside. They're like candy, you could just eat them and eat them and eat them!

Makes: 8-10 servings
Prep time: 24 hours
Cook time: 30-40 minutes

Ingredients:

  • 1 lb dried black-eyed peas
  • 1 large white onion, quartered
  • 1 poblano pepper, split, seeds removed
  • 2 jalapeƱo peppers, split, seeds removed
  • Oil, for frying

1. Soak peas overnight.

2. Place peas in a large pot with vegetables. Add enough water to cover. Bring to a boil and reduce to a simmer. Cook until peas are tender.

3. Remove all but peas and drain.

4. Heat a few inches of oil in a Dutch oven or deep fryer to 350 F.

5. Working in batches, add peas to oil with a slotted spoon or spider. Fry 3-4 minutes or until starting to brown. Remove to a paper towel-lined plate.

6. Lightly salt peas and serve in Mason jars.
